RED WHITE AND BLUEBERRY BERRY TRIFLE

Let’s kick off Summer with this festive Berry Trifle featuring layers of fluffy pound cake, sweet vanilla pudding, and homemade whipped cream, with juicy strawberries and blueberries. Trifles are one of those classic desserts that never really go out of style. They can be as easy (frozen pound cake!) or as complicated (scratch made everything!) as you’d like. You can spend all day lovingly baking your grandma’s famous pound cake, hand-whipping whipped cream, and delicately whisking a scratch-made vanilla pudding… Or you can snag a package of Sara Lee butter pound cake, a few packages of premade vanilla pudding, and a package of cool whip and call it a day. EASY TOFU KEBABS

Easy tofu kebabs that are perfect for summer grilling season! Summer is 1000% my favorite time of year and for us it means TONS of grilling! After I shared the  Grilled Tofu  recipe last month, I knew that I needed to make a version of it on kebabs. I used all of my favorite summer veggies on this one but obviously you can use whatever works best! These vegan kebabs are perfect for summer get togethers where you’re not sure if there will be any veggie options for you. You can assemble them ahead of time and then pop them on the grill whenever you’re ready! I marinated the tofu in the same marinate that I used with the grilled tofu because it’s simple and so good! Why re-invent the wheel when you don’t have to, right? In an ideal situation, the pressed tofu would get marinated overnight but if you don’t have that much time, a much shorter marinade would also work just fine. Homemade truffled mushroom pizza that you can throw on the grill in the summertime or prepare in the oven during the winter months! So easy to make and taste like something you’d get at a fancy pizza parlor! Fancy truffled mushroom pizza.. at home. There are only a few things that make me as happy as movie night and homemade pizza on Friday evenings. If you asked me about an ideal Friday night in my mid-twenties, I guarantee that wouldn’t be my answer back then. But now. As I slowly creep up further and further in my thirties, I’ll gladly be in bed before midnight, stay in on the weekends and prefer it, and not only will I not complain about Brussel sprouts, I favor eating them. With all these new preferences, I also have started to like homemade pizza over your no-frills takeout pizza joints. There’s just something about being able to control the toppings, amount of sauce (or skipping it all together), and having the freedom to throw a big arugula salad on top of my truffled mushroom
